’ Warm Peach Pie ‘
Over the years, I’ve developed delicious gluten free pies crusts. Its one of my most popular items.
Brown Rice Flour makes a particularly fantastic pie crust. The texture and flavor is much better than with wheat flour.
Amaranth Flour also works quite nicely.
I always mix spices like Coriander and Ginger into the flour as well to add depth and floral notes to the finished product.
Peaches make the most amazing pies. Throw fresh berries & raw sugar in for a tasty treat!
Pie is always best with Grass Fed Ice Cream. Try Goat or Sheep Milk Ice Cream for a new sensation! Hemp and Coconut Ice Cream is great too!
Local Pastured Cruelty Free. I Love The Berkshires and The Hudson Valley. The selection is vast and Farmers are friendly.
Get out there and get a slice!

“We’ve Got Wraps…”
I’m always ready to pull together meals from what clients already have in their refrigerator.
The trick to working with basic ingredients and making delicious meals is to apply a variety of techniques and herbs & spices to each component of the dish.
Something could be Sour.
Something could be Sweet.
Something could be Spicy.
Something could be Roasted.
Something could be Toasted.
Something could be Fresh.
Something could Crunch.
Something could be Salty.
When you combine techniques and spices with basic ingredients, you create layers of flavor which keep the pallet interested!
Shown: Casual Dinner for three.

NYE in Hudson NY at The Tin Ballroom 2012 w/ DJ Gio!
In the summer of 2011, DJ Gio hired a buddy and myself to move him out and into a new apartment. The move went quite smoothly. This led Giovanni to request my services as his assistant at what would be 7 gigs over the course of the summer and fall.
We bumped them all. The Berkshires. Columbia County. The Catskills. Both sides of the river. Bringin’ the noise for the dance floor!
Most recently, we got Gio set up in The Tin Ballroom on New Year’s Eve for a Wedding After Party. Congratulations Dove and Nicole!!! You girls are awesome together!
The Tin Ballroom is so cool because the walls and ceiling are covered in gorgeous textured tin and it’s completely lit by candles. It’s an amazingly beautiful venue.
We had a blast bringing in the New Year with Y’all !!!!
